wiaw #15 first post of 2013

Hello people!

First of all,… HAPPY NEW YEAR!!

How is going the 2013? We have a whole year ahead to get all our new resolutions!! Ready??

I ended the 2012 with a 5k run. Near where I live, a funny race was celebrated in order to say goodbye to 2012. And what can I say…! It was very funny and I improved my time in 2minutes! Happy and Proud!!

Well, more things… I know that I don’t join to WIAW since some weeks ago – since October! – , but today I’ll do it!

So, here’s my day!

Breakfast: Since I discovered the breakfast of FarmersMarketVegan, I can’t eat anything else for breakfast. It’s perfect. Healthy, satisfying and nourishing. My smoothie contains 1/2 avocado, rice milk, an apple, and a big handful of raw spinachs. Finally, I added some homemade granola (oats, pumpkin seeds, chia seeds, sunflower seeds, goji berries and agave syrup). You know what? Absolutely delicious.

Mid-morning: I took a Choco Berry Tea. Simply perfect.

Lunch: A cous-cous salad. Broccoli, carrot, red and green bell pepper, goji berries, sunflower seeds, ginger, pepper,… Not much to say. Simply and delicious.

Dinner: Well, I have to explain this meal. Last week, I cooked some red beans (a lot of beans!) and I was boring to eat the same day after day. Then, in order to make the most of them, I mixed the beans with some vegetables (eggplant and mushrooms,… I think) and I added some breadcrumbs to obtain more consistency.   I gave them shape like meatball, and that’s all. A different way to eat beans. So, my dinner has been forming by meatless “beans” balls, sweet potato and grilled asparagus.

And that’s all for today!

See you on the next post! 🙂
